
Hello! It’s been a while! I had to skip a turn on #CookitBlogit as I was in hospital.
So I’m going to be quick and snappy this week with one of my fave lunches!
You will need:
Puff Pastry (I cheat and use the ready to roll stuff)
Baby tomatoes (cherry or plum)
Yellow Pepper
Goats Cheese
Quantities are down to choice, depending on how many you want to make
Simply roll out the pastry
Slice the goats cheese
Chop the peppers
Halve the tomatoes
Pop the goats cheese, yellow peppers and tomatoes on top of the pastry
Pop in the oven at 200 degrees until the pastry has risen and the goats cheese melted.
Serve with a nice fresh salad and some balsamic syrup! mmmm
This is also great with the following substitutions:
Feta instead of goats cheese
Red onion marmalade instead of tomatoes
Or you can alter the toppings entirely and go for something like:
Bacon, Brie and Cranberry,
Cheddar, garlic and mushroom
You could do a cheese free version, but for me, it’s the cheese that makes it! 🙂
